Bisushima is a new signature modern Japanese restaurant located at the top of the hotel near Trafalgar Square nearby Ben Adams Architects. The 6,000 m² restaurant has two spacious rooftop terraces where you can dine al fresco and enjoy spectacular views of the famous London skyline, Covent Garden and Trafalgar Square.
The restorer Sergey Men, who also owns the world end market on King’s Road, developed the 190 cover food concept. The restaurant is located on the sixth floor of the hotel and also offers F&B services for hotel guests as well as a Japanese breakfast for room service.
After our work at Nobu, Ben Adams Architects worked with the restaurant’s branding agency to develop a design that is based on reduced Japanese minimalism and creates a harmonious relationship between food, guests and the environment. Without getting lost in pastiche, a number of Japanese-inspired elements can be seen inside, including a mural in blue and gold that references traditional Japanese landscape art and highlights the subtle transition from today.
An understated interior palette includes light gray leather dining rooms, concrete floors, the warm wood accents of European oak used throughout, and plenty of natural daylight. A coffered ceiling with an integrated, tailor-made lighting concept creates a more intimate ambience and refers to the Japanese repair technique of Kintsugi or “Golden Repair”.
During the day the restaurant offers a calm and peaceful setting, but after dark it shows the drama of Japanese cuisine. A large open grill and counter highlight the preparation and presentation skills of the chefs at work.
As well as the top floor restaurantAn additional speakeasy bar on the ground floor next to the parking lot offers a cool and accessible drinking experience. The bar was designed as a flexible space for private events or VIP launches and is an extension of the brand. It attracts visitors to the hotel and restaurant.
“Bisushima has been a dream of mine for many years so I’m excited to finally bring the idea to life. I want the restaurant to be a transitional space, the entire experience of which depends on the time of day you visit. For example, we will serve the only Japanese breakfast in London in the morning, it will be truly authentic, healthy and balanced with a great amount of natural light and a calming atmosphere.
“Then it will be informal and relaxed all day, a place of comfort and refuge away from the hustle and bustle of London on the streets below. In the evening things change gear. Much of Japanese culture is entertaining and drinking in the evenings, energy of endless possibilities. Bisushima with a view of the lights of London is the perfect place for delicious, authentic sushi and modern dishes with a Japanese essence, accompanied by interesting wines, sake and cocktails. In the evening the restaurant will be really lively and full of excitement. ” Sergey Men, Bisushima
